Slow Cooker Lentil Joes

 

As you know I love slow cooker cooking and I am always on the lookout for easy vegetarian recipes I can make for my son whenever our family gathers.  I came across this recipe recently (from Alyssa @simplyquinoa.com) and I knew I had to give it a try.  It was so easy and my son thought it was great.  So if you are looking to go meatless once in awhile, or you have a vegetarian in your life this is worth a try.

 

Ingredients

3-4 cups vegetable broth

1 cup finely chopped carrots

1 cup finely chopped mushrooms

1 cup finely chopped onions

2 gloves garlic, minced

1½ cup brown lentils

½ cup quinoa

1 (8oz) can tomato sauce

½ cup ketchup

2 TBSP maple syrup

2 TBSP hot sauce

2 TBSP mustard

1 TBSP chili powder

1 Tsp. paprika

Pinch of salt and pepper

 

Directions

 

Beginning with 3 cups of the broth, add everything to a slow cooker (I line mine with a slow cooker bag for easy clean up).  Stir to combine, cover and cook 2-3 hours on high or 4-6 hours on low.  Check and add more liquid as needed.
