Summer Corn Salad
Don’t you just love Pintrest? Found another great summer recipe for a salad that is light and refreshing and a perfect pairing for a BBQ. This recipe is courtesy of Lil’ Luna and I think it will become a go-to favorite for your summer gatherings. Enjoy.
3 tsps. Olive oil, divided
1 TBSP lime juice
¼ tsp. salt
1½ cups fresh or frozen corn, thawed
1½ cups cherry tomatoes, halved
½ cup finely chopped cucumber
2 TBSP minced fresh basil
1/3 cup crumbled feta cheese (goat cheese, or blue cheese would be great too)
2 TBSP Italian dressing (optional)
Whisk together 2 TBSP of oil, lime juice, and salt in a small bowl, set aside. Cook corn in a skillet with remaining oil until tender. Pour corn into large bowl, cool slightly and add tomatoes, cucumber and basil. Refrigerate until ready to serve. Right before serving drizzle with dressing, feta cheese and Italian dressing (if using).
