

Pineapple Pepper Chicken (Baked Sweet and Sour Chicken)
Sweet and sour chicken is a Chinese take-out staple. This recipe has all of the flavors of take out without the battered chicken. And, you can make it ahead of time and pop it in the oven just in time for dinner. It also makes a ton so if I am not cooking for a crowd I usually cut the recipe in half. Tomato Chicken Meatballs
I love easy, as long as easy still tastes great. And, since I hate to cook dinner, I am always on the hunt for an easy recipe. This recipe from 12 tomatoes fits the bill perfectly. It can be made early in the day and popped in the when it is time for dinner. I used about 2 lbs. of ground chicken because my store only had 16 oz. packages. I didn’t change anything else in the recipe and I got a ton of meatballs (about 18, 2” meatballs). Perfect for a crowd or for freezing


Chicken and Dumpling Casserole
I made this recipe for the first time last week. Oh, my, gosh. It was so good. In fact, it was so good I am making it again this week! My husband got home late from work a few days after I made this and I was eating some of the leftovers and before he even said hello, he said to me “did you finish that all up?” I smiled and said “no – I saved a big serving for you”.
