Sweet Potato Biscuits

Like sweet potatoes – but want to try something other than the same old
ho-hum casserole? Or do you have leftover baked sweet potatoes and aren’t sure what you should do with them? Look no further. This recipe is great. And a tasty way to do both. I love baking powder biscuits and now I’ve added sweet potatoes to the mix.
Can you say – YUM?
Ingredients
2 cups cooked, mashed sweet potatoes (about 2 potatoes)
1 stick butter, melted
1¼ cups milk
4 cups self-rising flour*
3 TBSP sugar
Directions
Mix together the sweet potatoes, butter and milk until well blended. Stir in the flour, baking soda and sugar. Shape the dough into a ball and knead about 8 to 10 times on a well-floured board. Roll the dough out 1 inch thick and cut with a 2 inch biscuit cutter (I just cut mine into
irregular shapes with a sharp knife). Baked in a greased baking in a 400 degree oven for 15-20 minutes or until lightly brown.
Yield: 15-18 biscuits
Prep time: 15 minutes
Cook time: 20 minutes
*In place of 1 cup self rising you may use 1 cup of flour mixed with 1½
tsp. of baking powder with ½ tsp. of salt
