Austrian Strawberry Cake

I found this recipe recently in the Milwaukee Journal. It is from Fanni’s Viennese Kitchen. If you like strawberry shortcake, you will LOVE this cake and it has only three ingredients. I was skeptical, I admit. It is delicious and sooooooo good with fresh strawberries (any berries would work) and fresh whipped cream. Enjoy.
Ingredients
4 eggs, separated
¾ cup sugar
1 cup sifted flour
Whipped cream and fresh strawberries for serving
Directions
Preheat oven to 350 degrees. In a bowl, beat egg yolks with sugar until creamy.
In a separate bowl, whip egg whites until still.
Carefully fold whites into yolk mixture. Gradually add the flour, do not over stir.
Transfer to a greased, 9” round cake pan. Bake in pre-heated oven 25-30 minutes. Cake will be golden brown on top and spring back when taped lightly with a finger. A knife inserted into center should come out clean.
Let cool. Garnish with whipped cream and strawberries.
