Flourless Monster Cookies

Makes 40 bars

I obviously had never made a monster cookie before because I didn't know they were flourless. Someone brought some into work and they were amazing. I had to try making them. I liked that this recipe was so easy and that it made a big batch. Also my first time making bars on a cookie sheet. This recipe is a win/win. Enjoy!
Ingredients
1/2 cup (1 stick) butter, softened
1 cup sugar
1 cup brown sugar
1 1/2 cup peanut butter (not all-natural) - I used chunky
3 large eggs, room temperature
1 TBSP vanilla extract
1 1/2 cup quick cooking oats
3 cups regular oats
1 tsp baking soda
1/4 tsp salt
1 1/2 cup mini M&Ms - I used regular
1 cup mini chocolate chips - I used butterscotch
Directions
Preheat oven to 350 degrees
Prepare a cookie sheet by lining with parchment paper, Silpat liner or spraying with non-stick cooking spray.
In a large bowl, or bowl of stand mixer (using paddle attachment) combine butter, sugar, brown sugar and peanut butter. Mix until fluffy and pale in color. About 1-2 minutes.
Add eggs and vanilla. Mix together.
Add in the oats, baking soda and salt. Mix until combined.
Add in the M&Ms and whatever flavor chips you are using (reserve some chips for the top of the bars). Stir together with a wooden spoon or spatula until combined.
Dump the dough onto the cookie sheet and spread out. It might take a few minutes. It helps if you dollop batches of the dough all over the cookie sheet rather than all in the center. Spread evenly over the pan with the back of a silver spoon. Sprinkle reserved M&Ms and chips over the top, pressing them lightly into the dough.
Bake for 17-20 minutes. The edges will be lightly browned and the middle will still look a little pale (mine did not look pale) and underdone, but it will finish baking in the pan. Let it cool for at least an hour so the bars can firm up and come together. You do not want to over bake these bars.
Lift off cookie sheet and cut into bars. A pizza cutter is a quick way to cut these. Store in an airtight container.
