Tuile Oatmeal Cookies

These cookies are fast and easy to make. They have a lacy appearance with crispy edges. They really spread when baking so baker beware. They take no time at all, even if you double the recipe as I often do. Enjoy!
Ingredients
1 cup old-fashioned oats
1 cup granulated sugar
1/2 cup unsalted butter, melted
1 egg, beaten
1 tsp vanilla extract
1/4 cup all-purpose flour
1/4 tsp baking powder
1/4 tsp salt
Directions
Preheat over to 350° or (175° C) and line two baking sheets with parchment paper. In a large mixing bowl, combine the oats and sugar. Stir in the melted butter, egg, and vanilla until well blended.
In a separate bowl, whisk together the flour, baking powder and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Drop a teaspoonful of dough onto prepared cooking sheets, spacing them about 2" apart to allow for spreading. Bake 8-10 (mine were done at about 7 minutes) or until the edges are golden brown.
Let the cookies cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
If you want to change these up, try adding a handful of chocolate chips, raisons or cranberries. You can also try adding cinnamon or nutmeg or even a spoonful of peanut butter or almond butter.
