Tuna Burgers

Make 5 burgers

Since my son is a non-meat eater I am always looking for easy recipes that would fall into the category of food he will eat (and also his kids). I saw this recipe recently and decided to make these for his birthday. They were a hit. I enjoyed them so much I am making them again this week-end. I made them early in the morning, kept them in the fridge and then cooked them up just in time to eat. This will become a regular recipe on our house. Enjoy!
Ingredients
2 cans tuna (in water) drained well (2 - 6 ounce cans)
1 1/2 cups cracker crumbs
1 egg, lightly beaten
2 stalks of celery finely chopped
1 cup light mayo
Shredded cheese (optional)*
Dill Mayo Sauce
1/2 cup mayo
1 TBSP lemon juice
1 tsp dried dill (more to taste)
Instructions
In a medium bowl add tuna and flake well with a fork. Add cracker crumbs, egg, celery and mayo. Mix until combined.
Form into patties (I made 5 patties). Place in a lightly greased skillet and cook on low to medium heat, approximately 3-4 minutes per side until golden brown or desired doneness. Serve immediately. Top each with dill mayo sauce.
Dill Mayo Sauce
In a small bowl whisk together the mayo, lemon juice and dill.
*If using cheese (before adding to bun) place shredded cheese on top of each burger and place under broiler just until melted.
