Poor Man’s Crab Casserole

I love this combination of crab and cod. The flavor is mild with just a hint of sweetness from the crab. It comes together quickly and per my usual I make it early in the day and pop it in the oven when it is getting to be dinner time. I hope you try it. Enjoy.
Ingredients
1-lb. pkg. frozen cod fillets (not breaded) thawed, drained
Crab Mixture
2/3 cup butter melted
1 cup crushed herb seasoned stuffing mix
6-ounce package frozen crab meat, thawed, drained
4 ounce can mushroom stems and pieces drained
1 egg
2 TBSP. chopped, fresh parsley
¼ tsp. salt
2 TBSP lemon juice
¼ tsp. hot pepper sauce (I don’t use this)
Topping
½ cup crushed herb seasoned stuffing mix
2 TBSP butter melted
Directions
Preheat oven to 350 degrees. Place cod fillets in an ungreased, 8” square baking dish. In 1½ quart bowl mix together all crab mixture ingredients. Sprinkle crab mixture over cod fillets. In same bowl combine topping ingredients, sprinkle over crab mixture. Bake for 30-35 minutes or until heated through and fish flakes easily with a fork. Serve immediately. Makes 4 servings
