Maple Pecan Sugar Cookies

Love maple? Love cookies? Then this is the recipe for you. These are a melt in your mouth kind of cookie. I think it is a nice addition to the Christmas Cookie tray and I am pretty Santa would love them. Enjoy.
Ingredients
2 sticks (8 oz) butter, softened
½ cup granulated white sugar
1 large egg yolk
3 TB. pure maple syrup
½ tsp. pure vanilla extract
2 cups all-purpose flour
1½ cup chopped pecans, (about 6 oz)

Directions
In a medium bowl, beat the butter with an electric mixer until pale and creamy, about three minutes. Gradually beat in the sugar until well blended. Add the maple syrup, egg yolk, and vanilla and mix until blended. Mix in the flour and pecans until blended. Divide the dough in half and shape into long logs. The easiest way to do this is to place the dough on plastic wrap, pull the wrap around the log, and roll with your hands until round. Refrigerate until firm, about 2 hours. Preheat oven to 350 degrees. Take the dough out of the fridge, slice about ¼” thick. Place discs on parchment lined cookie sheets and bake for about 10-12 minutes until golden around the edges. Transfer to a wire rack to cool.
When completely cooled roll in Bakers Sugar and store in an air-tight tin.
