Grandma Lil’s Bran Date Muffins

My Grandma Lil was always in the kitchen. Especially when family was over. I was at a family reunion recently and it made me think about all of the recipes of hers that I have. This is one she made often. She used to bake up a dozen or so at a time and keep the batter in the fridge and bake up a fresh batch as she needed them. Maybe because they have bran in them, or maybe because it was one of my grandmother’s recipes, I don’t feel guilty eating them. Enjoy.
Makes approximately 32-34 muffins
Ingredients
1 cup chopped dates
2½ tsp. baking soda
1 cup boiling water
1-cup sugar
½ cup butter, softened
2 eggs, well beaten
2 cups all bran or bran buds
1-cup bran flakes
2 cups buttermilk
2½ cups flour
Directions
Preheat oven to 375 degrees. Pour boiling water over dates and baking soda, set aside to cool slightly. Cream butter and sugar. Add beaten eggs, mix to combine. Add both bran cereals and buttermilk and mix to combine. Add date/water mixture. Mix thoroughly. Add flour and mix just until combined.
Fill paper-lined muffin cups and bake approximately 18-20 minutes. Cool and enjoy.
