Crispy 'N Crunch Cookies

Makes 6-7 dozen

A co-worker gave this recipe to me many years ago. I cannot even tell you how many times I have made these cookies. I took them to a gathering last night and was asked for the recipe by a new friend. I told her I was pretty sure they were on my blog. I got a message from her this morning saying they were not. I was shocked I hadn’t shared them yet – they are that good. It makes a large batch so they are perfect for a cookie exchange too. Enjoy.

Ingredients

1-cup sugar

1-cup firmly packed brown sugar

1 tsp. baking soda

1 tsp. cream of tartar

1-cup butter, softened

1 cup cooking oil

1 tsp. vanilla

1 egg

3½ cups all purpose flour

1-cup rolled oats

1-cup coconut

1-cup crisp rice cereal

Directions

Preheat oven to 350 degrees. In a large bowl, combine first 9 ingredients; beat two minutes on medium speed until smooth. Add flour; beat one minute on low speed until smooth. Stir in remaining ingredients. Drop by rounded teaspoonfuls, 2 inches apart onto parchment-lined cookie sheets. Flatten slightly with bottom on glass dipped into sugar. Bake 10 to 14 minutes (9 works best in my oven) until light golden brown. Let cool on cookie sheets for a minute or so and then remove to wire rack to cool. Cookies harden as they cool.
